Managing workforce operations in high-volume aviation catering facilities
The client operates multiple aviation catering facilities that prepare meals for domestic and international flights. These facilities function as large-scale food production environments where hygiene standards, operational compliance and workforce discipline are critical.
The management team required a partner capable of supporting wash-up and potwash operations across several locations while maintaining strict food safety and hygiene standards.
As operations expanded, additional work areas were introduced under tight timeframes. Multiple operational zones needed to be supported simultaneously, including kitchens, receiving docks and dry stores. Workforce requirements fluctuated regularly depending on operational demand.

Weekly planning meetings were conducted between Challenger site managers and our client’s operations teams. Consolidated rosters were created and agreed in advance and shift requests were managed centrally through site leadership.
This structured approach improved visibility of labour allocation while ensuring operations remained organised and controlled across multiple facilities.
