Operating in high-volume food production environments with strict hygiene standards, the program stabilised operations across multiple sites while introducing structured workforce planning, clear operational oversight and greater visibility of workforce deployment.

The challenge

Managing workforce operations in high-volume aviation catering facilities

The client operates multiple aviation catering facilities that prepare meals for domestic and international flights. These facilities function as large-scale food production environments where hygiene standards, operational compliance and workforce discipline are critical.

The management team required a partner capable of supporting wash-up and potwash operations across several locations while maintaining strict food safety and hygiene standards.

As operations expanded, additional work areas were introduced under tight timeframes. Multiple operational zones needed to be supported simultaneously, including kitchens, receiving docks and dry stores. Workforce requirements fluctuated regularly depending on operational demand.

This created several operational challenges:

Required a workforce partner capable of operating reliably in high-volume food environments while maintaining strong operational oversight.

The solution

Structured workforce management and operational oversight

Challenger implemented a structured workforce model supported by strong on-site leadership and centralised planning.

Each site was supported by site managers, supervisors and team leaders to ensure consistent oversight and coordination.

The on-site management model provided:

To manage fluctuating workforce requirements, Challenger also introduced a disciplined workforce planning process.

Weekly planning meetings were conducted between Challenger site managers and our client’s operations teams. Consolidated rosters were created and agreed in advance and shift requests were managed centrally through site leadership.

This structured approach improved visibility of labour allocation while ensuring operations remained organised and controlled across multiple facilities.

Workforce operations were delivered within strict food safety environments, where maintaining hygiene standards and operational discipline was essential.

The outcome

Reliable workforce delivery across complex food production environments

Challenger continued supporting the client’s catering operations for eight years, providing consistent workforce delivery across multiple locations in Australia.
